Rennet
Rennet adalah sekelompok enzim yang dihasilkan oleh lambung binatang menyusui untuk mencerna susu ibu. Rennet mengandung enzim proteolytic (protease) yang memisahkan susu menjadi bagian padat dan cair. Enzim aktif dalam rennet disebut rennin atau chymosin (EC 3.4.23.4), tetapi rennet juga mengandung beberapa enzim penting lain seperti pepsin atau lipase. Kegunaan rennet adalah untuk membuat keju dan junket.
