Cholent (Yiddish: טשאָלנט, tsholnt atau tshoolnt) atau Hamin (bahasa Ibrani: חמין) adalah sebuah rebusan Yahudi tradisional. Hidangan tersebut biasanya direbus sepanjang malam selama 12 jam atau lebih, dan disantap saat makan siang pada hari raya Sabat. Cholent dikembangkan sepanjang berabad-abad agar sesuai dengan hukum Yahudi yang mengatur cara memasak pada hari raya Sabat.
Terdapat beberapa variasi dari hidangan tersebut, yang menjadi standar dalam dapur Ashkenazi dan Sefardim.[1] Bahan dasar cholent adalah daging, kentang, kacang dan jelai. Hamin gaya Sefardmin menggunakan nasi sebagai pengganti kacang dan jelai.
