Traditional goan bread forms part of the staple diet for most people in Goa and is produced by an overwhelming number of bakeries in the state.[1] These goan bakeries produce multiple traditional bread varieties, namely Poee, Kankana, Undo, and Pav. The baking of these traditional varieties was pioneered during the colonial Portuguese rule. Local bakers often used toddy in their preparation giving the goan bread a distinct flavour compared to its European counterpart.
