CocoTerra is an American food technology company that develops tabletop chocolate-making appliances for home and small-scale professional use.[1][2] Its flagship product is a countertop machine that automates multiple stages of chocolate production, from grinding cocoa nibs to molding tempered chocolate.
The company was incorporated in 2016 and is headquartered in Palo Alto, California.[3] CocoTerra has been described by several industry and technology publications as a pioneer in tabletop or countertop chocolate-making systems.[4][5]
History
CocoTerra was founded by Nate Saal, a molecular biophysics and biochemistry graduate of Yale University.[6] Before starting CocoTerra, Saal worked in software and hardware startups in Silicon Valley, including roles related to networking and consumer technology.[7]
According to the company, the idea for CocoTerra arose after Saal attended a chocolate tasting where parallels between specialty coffee and fine chocolate were discussed. He observed that, unlike coffee, there was no widely available kitchen appliance that allowed consumers to produce chocolate from cocoa beans or nibs at home.[8]
CocoTerra’s home chocolate-making system was shown publicly at events such as the Bay Area Maker Faire and the Consumer Electronics Show (CES), where it was presented as a compact, connected kitchen appliance.[9][10] In 2023, CocoTerra was listed among the brands selected for Mondelēz International’s SnackFutures CoLab start-up program.[11]
Products
CocoTerra chocolate maker
The company’s flagship product is a countertop appliance that produces approximately 0.5 lb (about 250 g) of chocolate per batch.[12] Users begin with roasted cocoa nibs and other ingredients such as sugar, cocoa butter and milk powder, and the machine integrates several traditional chocolate-making stages, including grinding, refining, conching, tempering and molding, into a single workflow.[13] The full process from nibs to solid chocolate takes around two hours, guided by digital recipes and an accompanying mobile application.[14]
CocoTerra supports recipes for dark, milk and white chocolate, and users can add flavorings or solid inclusions such as nuts and spices.[15] The appliance produces chocolate in a ring-shaped mold, which can be further portioned or decorated.
The system is designed as an open platform: ingredients are added directly rather than via proprietary pods, allowing users to choose cocoa origins and ingredient suppliers according to their preferences or dietary requirements.[16]
CocoTerra Pro
CocoTerra has also developed CocoTerra Pro, a tabletop system aimed at professional and industrial users such as cocoa researchers, chocolate makers and ingredient developers. According to the Fine Chocolate Industry Association, CocoTerra Pro is used for rapid sample production to support tasks such as fermentation characterization, roast profile optimisation, recipe development and ingredient research.[17] Like the consumer machine, it combines grinding, refining, conching, tempering and molding in a single unit.
Technology
CocoTerra’s machines are connected devices that pair hardware with software control. A companion smartphone application is used to select recipes, adjust certain parameters and monitor progress during production.[18] The company has filed patents for aspects of the system in the United States, Europe and Japan.[19]
Technology and food-industry commentators have compared CocoTerra’s approach to other all-in-one kitchen appliances that simplify complex processes, such as home beer-brewing systems and automated bread machines.[20][21]
Funding
CocoTerra is privately held and has raised funding from angel and private investors. The company has stated that its investors include John Scharffenberger, founder of Scharffen Berger Chocolate, along with individuals from the hardware, software, consumer technology, cacao, wine and restaurant sectors.[22]
